As for my omission of Mr James, it was an oversight predicated by my eagerness, anticipating the arrival of Gov. Brown as I am. (This may also have something to do with my apalling grammar, or "apawling" as my new ILC chum would undoubtedly put it). However, Google searches on "Denis Beaune" and "Denis Bonne" showed an overwhelming preponderance of the instances where these two elements appear adjacently, as having punctuation inserted between them. Tsk! A search on "Denis Bon", however, turned up this. So, unquestionably Denis Bon exists!

That being said, I wouldn't have thought Chianti was the way to go either, not really cultured enough for a dish like liver. A Cote Rotie would be the superior choice.
