I can remember Arizona State that had Bonds, Oddibe McDowell and Mike Deveraux in the outfield.
The best team as pros was Mississipi State that one year had Will Clark, Rafael Palmeiro, Bobby Thigpen (who also played OF, when not relief pitching), Jeff Brantley and Doug Dascenzo (who also was a starting pitcher). What is wild is that they LOST!
I can even remember seeing Roger Clemens for the first time pitching for Texas. That team also had future Boston teammate/World Series goat Calvin Schiraldi.

And I always get excited when my alma mater, the University of Texas, has a good team. They won the whole thing two years ago and came very close again last year. They've been ranked in the top 5 all of this year and were #1 for a while. When I was in school I would catch the shuttle over to Disch-Falk Field after class and spend the rest of the afternoon watching baseball (students got in free, but weekday games were very sparsely attended).

IU almost made it to Omaha a few years ago, but I know nothing about the club. The only two pros that I know played baseball at Indiana are Ted Kluzewski and Mickey Morandini. Indiana's baseball stadium is in an awkward place on campus, it is hidden behind a hill and huge dorm.
Klu was the hitting coach of the Big Red Machine and was an all american in football and baseball. There is a cool painting of him in Assembly Hall.
Cliff Gustafson the long time coach at Texas was cool. He looked like he should be a coach of a baseball team in Texas.

A few years ago, I lived about one city block from a NCAA D1 school field and man whenever I worked from home all you'd hear from 8am-6pm was the constant pings of aluminum bats from February - September.
After one afternoon I was so taken aback by the sheer amount of cuts these batters were taking (literally all day long) that I decided to look up their record:
