It's mainly because they picked up from where Eclipse went bust, and aimed to continue that series as such. Plus resources/expense/quality/sales vs. each other considerations. But there tend to be at least two other publishers banging out cheapjack daily collections at any given time to take up the slack.

There was a seller on ebay with a set of Fanta's run of Sunday softcover volumes, and we did a little do-si-do for a while but finally did a deal, and they arrived today. Heppy!
