i used to make yummy eggplant grinders. cover round slices in olive oil, cover with bread crumbs, bake them in the oven, add some roasted red peppers and grilled green peppers, some oregano, and some marinara sauce all on a toasted hoagie/grinder/sub roll. yummy stuff.

"Vegetables" is a grocers term, not botanical. Yes, tomatoes (and anything that is a package for seeds) are a fruit, broccoli and artichokes are flowers, carrots and yams are roots, potatoes are stems, lettuce and onions are leaves...I would be happy to get rid of "vegetables" in exchange for a new president!
