they are lighter and more magical... they ones i used to get in GPT/Burg were not even steamed....kind of powdery

also, they tend to be filled with better stuff than spring rolls: radish, carrot, mint, cilantro, ground peanuts, various lettuces, tofu cubes, grilled thinly-sliced beef, shrimp, chilis - all are possible with the summer roll. spring rolls mainly use shredded cabbage/carrot.

Wait, summer rolls = wrapped in rice paper, so the ingredients can be seen from the outside? We used to serve those at this restaurant with DUCK in them! Us young kitchen bitches, leaving at 3am, wasted drunk, would shove handfuls of them into our pockets for stumbling munchies for the walk home.

it's very easy: buy some wraps at the store, prepare according to package instructions, and lay out on the counter. prepare some rice vermicelli and toss in a bowl with seasoning (rice vinegar, soy sauce, sesame oil, etc) to taste. add in some chopped cilantro or mint, tofu cubes, meat, carrot, radish, whatever. plunk some down on top of the wraps, and roll up. if they look wonky, just cut them into pieces before serving.
