I'm sure I'll get grief for this but pâté, good pâté is wasted on banh mi and I really need to start making them 'cause I want to use real, crunchy crust baguette instead of the chewy shit that everybody ends up making a generation or two after their first exposure to French baking. It's one reason why I loved banh mi in Paris.

iced vietnamese coffee is super easy to make at home!

go to chinatown and get: 1. vietnamese coffee filter (like a buck or two) 2. the condensed milk can with the fat old chinese guy logo 3. cafe du monde or trung nguyen coffee

fill the coffee filter with coffee just to the top of the screw (so you can't actually screw on the filter part), pour about 1/2 inch of condensed milk into a glass, put the filter on top of glass and pour boiling water into it. when it's done mix, then pour into a glass full of ice cubes. there you go.

The vietnamese kinda-related version is called "banh bao" which I guess I can see people hear as "ham bao" but that's probably something different.

I know that "banh" is just the transliteration of "pan-" from panis but I always wondered if "bao" might be related to "pao" from the portuguese?

While not giving a definitive response, I surmise from that article that bao stems from 'pao'. Also I'd bet that while Japanese got the word from the Portuguese, Vietnamese got it from the French 'pain'.

The "o" in the portuguese "pao" has the tilde over it which is pronounced with an "N" sound (pao = "pan"). nb: not fluent at all in portuguese.

also: Portuguese were trading with VN (and japan, china, most of east asia) a few centuries prior to the French invasion iirc.

i asked a person who is an authority on these matters what a "hum bao" was and she said "i have no idea but my friend in seattle talks about them"... sounds regional, a quick google shows mostly pac nw references. i tried to google in chinese "呀包" (crying dumpling) and nothing culinary showed up, mostly purses and handbags lol.
