I had 6 total

2 carnitas, 2 beef, 2 steak (never tried the steak tacos at this place before. Still waiting to find actually really good steak tacos out there somewhere).

Maybe I'll go back tonight and just go full on chorizo/pastor/carnitas- that seems like the way to go

Yeah I wonder if the search for a steak taco is a red herring when there are so many amazing traditional preparations like al pastor, carnitas, barbacoa (esp barbacoa). Who cares about steak? I like cecina (salted beef) but it's always dry and chewy compared to the slow-cooked sauced variations.

Yeah, maybe there's a way to do really good carne asada tacos at home where you can slice the beef and put it right into the tortilla and add the stuff and eat it while it's still warm AND tender. Steak tacos from any restaurant seems doomed to result in tough, overdone meat, though.

A grilled skirt steak makes great tacos but you don't put the meat back on to cook after you slice it--gotta have that med-rare center for moisture.

I had four last night. Carnitas and pastor. I think the pastor goes better in their tortas. Tonight or tomorrow will be the carnitas v barbacoa face-off and then the winner will go up against chorizo.
