California Pizza Kitchen began in 1985 when attorneys Rick Rosenfield and Larry Flax traded in the courtroom for the dining room. Having always wanted to get into the restaurant business, they pitched their legal pads and turned toward California-style pizzas. After several months of exploring and countless hours of research, they set out to re-invent pizza in the United States opening the first California Pizza Kitchen in Beverly Hills, Calif. on March 27, 1985.

We got a Round Table pie a few weeks ago cuz there's one near our house. Had not had one in many years. Not so good. Would have been better to have eaten it there in Arthurian atmosphere, though, especially if they still have Pac Man.

i grew up a few blocks away from pizza port!!

i never thought the pizza was all that - it has that round table thing going on where the crust + sauce + cheese + toppings seem to exist in different universes and will separate from each other if you tip your slice more than 5 degrees off horizontal - but the vibe is VERY NICE there (and the b33r is obviously tops).

then they started folding meat + cheese into the dough.

i find that the water quality out here is very different from the water quality back home -- one of the big reasons nyc pizza and bagels are so definitively "new york" is that there's some weird voodoo in the tap water that gives the bread/crust a particular taste that's hard to replicate elsewhere. maybe it's the fluoride, i dunno.

I've heard that bullshit about the NYC water making shit taste different. But it doesn't. I've had bagels and pizza be both good and bad in NYC and everywhere else. NYCers just like to make shit up. Total pizza bummer last night - the place's oven died and so our pizzas were delayed. When we finally got them home, we realized that they had given us a pepperoni pizza instead of the garlic clam and the pesto pizza had no sausage. Bullshit California pizza.
