thought it was gonna be my million dollar money making scheme. apparently everything i think has already been thought. i actually really liked it. mrs jaxon thought it was ok, but would rather have regular guac.
4 bananas 1 jalapeno pepper, minced 1 small red onion, chopped 1/2 bunch cilantro, chopped 1 tabelspoon garlic, minced 1/2 teasoppon of Tabasco sauce 1 tablespoon olive oil Juice of 1 to 2 limes, to taste Salt, pepper and Cayenne pepper, to taste Directions:
Mash bananas and slowly incorporate other ingredients to taste. Consistency should be similar to regular guacamole.
Serve with taro chips, plaintain chips, grilled shrimp or chicken skewers.

i used unripe bananas because that's all i could find and it was good. biggest problem is it went brown in a day or 2

A lot of latin stews (like ajiaco or that cuban mutton one i can never remember) use green plantains as thickener; before ripening they're i think about 70% starch by pulp dry weight, and much better considered as bulky solids and cooked as, say, batatas than (i think) desserty fruits.

and yeah, if you cooked the plantains first it might work but it depends on how you cooked them i would think. unripe bananas seem to be less effort.
also green bananas or plaintains with garlic is totally normal!
