also, i need to become better friends with the ham 'n cheese croissant. the place nearby offers bacon egg and cheddar on a croissant but i think i'll pass out if i try it. it's just too good.

oooh, I can play. I made this on the weekend for the boyfriend and myself:

toasted flax bagels
fried egg in perfect circle thanks to prized silicone ring
herbs de provence, cumin, salt, pepper
tomato sauce & shredded cheese on top after egg sets, allowed to melt before being removed from pan and placed on bagel

soooo good. never considered lettuce though.

when I feel decadent, I buy these silly sausage patties that you fry up in a little butter, and make breakfast sandwiches with egg, previously listed herbs, slice of american cheese and sausage on an english muffin. wrap it in a paper towel and once more in plastic wrap, bung it in the freezer, enjoy once I get to work thanks to the magic of the microwave. The egg doesn't taste quite the same as a fresh one, but there's about a 10% difference between fresh and my week-old frozen ones. Now I want a breakfast sandwich.

i used to work at a place that sold a sandwich called the BEST - bacon, egg, spinach, tomato, with sriracha and mayo on a focaccia bun. great breakfast sandwich!
