goat is actually a v tough not at all tender meat which is why its always braised/stewed/slow-cooked - chew on a seared goat steak if yr not believing me

feeling the al pastor when it comes to tacos. and i also found this stuff called cecina, which is like super thin slices of steak that is good too. but yea if i get tacos they al pastor. what the hell does that mean anyway, "al pastor" --- "to the pasture"; er farm style? but they don't make 'em with the pineapple in chi-town, or i aint been to that place that does yet.
