it's good w/ eggs if the lime is mixed in the pico de gallo. pintos + eggs + pico is the best in my opinion

i've tried it both single and double, with many different kinds of tortilla, and depending on the amt of liquid in your pico de gallo/salsa + lime + meat juice, doubling for sturdiness usually becomes quite necessary unless you want to see yr taco fall to pieces before you.

if you're using cheese (not fresco) it helps to melt it to the bottom before you add the fillings, like a protective layer. this doesn't always work though and i don't always want melted cheese.

this chicken taco in the foreground that i made 2 years ago fell the fuck apart and it was because i did not double up. the tostada in the background, however, was perfect and delicious. sometimes i like tostadas better because they are fun to eat and can take more lime.

I'm going where I have never gone before: Eastern Carolina bbq tacos

On Friday I made a big batch of bbq, and I've been trying to think of things to do with it so I decided on tacos.

Here's the plan:

bbq pork, red cabbage and raw beet slaw, scallions, queso fresco, maybe salsa verde? maybe that's too much.

I'll post a pic of them later and let ilx judge me

I used feta in the absence of queso blanco. I adore cheese, melted monterey jack or shredded cheddar or pretty much anything you'd want to combine with beans and rice and a long-stewed meat item. But for my own good, I've tried to cultivate a taste for slightly less Americanized Mexican food, otherwise I'd be having cheesy burritos the size of a loaf of bread every other night.
