I was watching an episode of Kitchen Nightmares and he called an apprentice chef, "Big Man". Can he do that? Is that allowed?

Gordon likes to say "Big Boy" a lot on Hell's Kitchen but never gives out a "Big Man". Maybe they have to graduate to "Big Man" first before they get called that.
