i want to know what you choose when faced with the various types of bread out there, plz. i'm not talking about brands, rather styles of bread. which one do you prefer? extra points for why

anything this guy makes is some of the best bread of all time imho (caveat: i am in no way affiliated). carefully selected ancient grains he grinds right before mixing, naturally leavened w/sourdough starter (but not "sour" necessarily), baked in a wod-fired overn
