depends on what for, right?

pecorino toscano is also very good - like a manchego

the late great, Friday, 16 March 2018 19:10 (seven years ago)

voted Parmigiano and already regretting since I was just reminded of the excellent margarita slice with fresh buffalo mozzarella I had a few weeks ago

and the caprese I made with fresh tomatoes and not even buffalo just regular mozzarella

but parmesan is so great in so many dishes, in a way the best cheese of all

niels, Friday, 16 March 2018 19:10 (seven years ago)

xp but yes totally depends on what for (although parmigiano and pecorino are kinda head to head in that regards)

niels, Friday, 16 March 2018 19:11 (seven years ago)

xp i'm sorry, it's not like a manchego

it's softer (but also sheep's cheese)

more like ossau-iraty iirc

the late great, Friday, 16 March 2018 19:11 (seven years ago)

voted parmigiano reggiano because, yes, it's a staple

i really like mixing pecorino romano though - parmesan is no good for my favorite pastas (cacio e pepe, carbonara)

the late great, Friday, 16 March 2018 19:14 (seven years ago)

that should have read "mixing in pecorino romano to the rotation"

the late great, Friday, 16 March 2018 19:14 (seven years ago)

haha this is from wiki

In many parts of the world, buffalo mozzarella is considered to be the best thing ever.

https://en.wikipedia.org/wiki/Buffalo_mozzarella

I had cacio e pepe (or a version of it) at a great Italian restaurant recently and it blew my mind

niels, Friday, 16 March 2018 19:16 (seven years ago)

Fuck off I hate this poll. Arms v legs v genitals

imago, Friday, 16 March 2018 19:17 (seven years ago)

Actually I would pick pecorino over parmesan every time so it's just arms v legs

imago, Friday, 16 March 2018 19:19 (seven years ago)

unreasonable

you wouldn't want to sprinkle pecorino romano on something that's already quite salty, like a caesar salad or a slice of pizza

the late great, Friday, 16 March 2018 19:22 (seven years ago)

I should have maybe added gorgonzola as a poll option... but if I want blue cheese we have good stuff in Denmark

niels, Friday, 16 March 2018 19:23 (seven years ago)

when i was working cheese i always hated having to handle the gorgonzala dolce ... so sticky, drippy and nasty

give me stilton or give me death

the late great, Friday, 16 March 2018 19:26 (seven years ago)

People who are not voting for mozz are lying to themselves.

Yerac, Friday, 16 March 2018 19:29 (seven years ago)

I think it's weird to compare a mild soft cheese to two sharp hard cheeses, especially given that the two hard cheeses have similar uses and the soft one is totally different.

Fedora Dostoyevsky (man alive), Friday, 16 March 2018 19:50 (seven years ago)

yea i agree

marcos, Friday, 16 March 2018 19:51 (seven years ago)

write-in for pecorino sardo

Louis Jägermeister (jim in vancouver), Friday, 16 March 2018 19:53 (seven years ago)

I guess I could have excluded Pecorino (which I feel confident will be 3rd)

niels, Friday, 16 March 2018 20:02 (seven years ago)

write in for genitals

A is for (Aimless), Friday, 16 March 2018 20:03 (seven years ago)

I voted parmesan but pecorino Romano is not that far behind. We don’t have much in France like those (fortunately we have lots of those!)

droit au butt (Euler), Friday, 16 March 2018 21:20 (seven years ago)

yeah France is probably tops, certainly quantity-wise, but Italy has a few exceptional knockouts

maybe a Brie de Meaux v Comté showdown later

niels, Saturday, 17 March 2018 10:45 (seven years ago)

Not a choice, I could eat all three in the same meal.

American Fear of Pranksterism (Ed), Saturday, 17 March 2018 20:04 (seven years ago)

I mean proper Mozz di Bufala is definitely the most delicious of these eaten on its own, but I couldn't imagine sprinkling that on pasta, and pasta would be sadder without the other two.

Fedora Dostoyevsky (man alive), Sunday, 18 March 2018 05:02 (seven years ago)

I've put it on pasta before because I am shameless. But the water content tends to make everything goopy.

Yerac, Sunday, 18 March 2018 14:00 (seven years ago)

I'd rather have the other two than mozzarella di bufala, but maybe I don't know the proper stuff as well as the more quotidien stuff?

I have fond memories (and photos) of eating pecorino under the Palatine Gate in Turin, from the big market right there, just biting off chunks off the big morceau we'd bought.

droit au butt (Euler), Sunday, 18 March 2018 14:43 (seven years ago)

mozz just gets kind of lost on pasta, it's not terrible it's just a waste

Fedora Dostoyevsky (man alive), Monday, 19 March 2018 03:07 (seven years ago)

Polling these makes no sense

nevertheless, he stopped (flamboyant goon tie included), Monday, 19 March 2018 13:00 (seven years ago)

Pecorino Romano is like anchovies: essential in cooking, but not really edible on its own

I mean, you could

I have

It's salty

nevertheless, he stopped (flamboyant goon tie included), Monday, 19 March 2018 13:01 (seven years ago)

pecorino on its own is delightful. truffle pecorino especially

I always want Pecorino to be more to my liking than it is.

Uppercase (Eric H.), Monday, 30 April 2018 01:13 (seven years ago)

yeah, it kinda has some weird, sour aftertaste doesn't it?

niels, Monday, 30 April 2018 06:33 (seven years ago)

on my honeymoon i went to puglia and one meal we had came with an appetizer that was literally just an enormous ball of fresh mozzarella on a plate and i was like a+ best restaurant ever

illegal economic migration (Tracer Hand), Monday, 30 April 2018 07:28 (seven years ago)

spent last week on the French side of the Italian border and enjoyed delicious pecorino romano so I voted for that. I think at this point I like sheep cheeses more than cow cheeses.

droit au butt (Euler), Monday, 30 April 2018 11:58 (seven years ago)

for eating on their own i also prefer sheep

but parm is such a staple ...

the late great, Monday, 30 April 2018 15:03 (seven years ago)

Automatic thread bump. This poll's results are now in.

System, Tuesday, 1 May 2018 00:01 (seven years ago)

seems legit, parmesan must be more influential
