I am now reading a reddit on bechamel in lasagne and getting mad. But I guess there are people who actively seek out creamed spinach and creamed corn and creamed mushrooms...

Yerac, Friday, 23 March 2018 12:43 (seven years ago)

struggling to find any recipes for lasagne al forno that don't feature bechamel as standard

Cambridge Metallica (Noodle Vague), Friday, 23 March 2018 12:49 (seven years ago)

Like I get that they wanted the creaminess to balance out the acidity of tomatoes and again it acts as a "rustic" filler but it's disgusting. Unless you used it to moisten a ricotta/mozz/herb mixture, but I always just see it as a big soupey mess. I hate a slippery lasagna. I want crisp edges.

Yerac, Friday, 23 March 2018 12:54 (seven years ago)

i think that can be moderated thru cooking time and sauce thickness

Cambridge Metallica (Noodle Vague), Friday, 23 March 2018 12:54 (seven years ago)

Also, I can't find regular pickles here that don't have sugar added. Sweet, off dry pickles are the worst.

Yerac, Friday, 23 March 2018 12:55 (seven years ago)

I love that little kick of nutmeg from a good bechamel.

Frederik B, Friday, 23 March 2018 13:00 (seven years ago)

I have been trying to work out why there is such an outcry over bechamel on lasagne, but if it's wet and sloppy then fair enough, that's bad. Bechamel doesn't need to be like that.

mfktz (Camaraderie at Arms Length), Friday, 23 March 2018 13:04 (seven years ago)

Bechamel is what you give to baby squirrels through an eye dropper.

Yerac, Friday, 23 March 2018 13:05 (seven years ago)

Béchamel is bad always. You savages wouldn’t put mayonnaise in your lasagna would you?

do I really want to know?

Straight red sauce is far, far superior to bechamel. Bechamel should go the way of aspic.

Yerac, Friday, 23 March 2018 13:42 (seven years ago)

mmm, larks' tongues in bechamel

one of them definitely comes straight from Putin

Cambridge Metallica (Noodle Vague), Friday, 23 March 2018 14:31 (seven years ago)

iirc (was a long time ago) i used to make lasagna @ a resto. and bechamel was gently layed over the top layer of red sauce. so it wasn't actually in it. and after it cooked it was a creamy layer, but not runny at all. i always thought it was a presentation thing - like the contrast it makes with the sauce just underneath it. and you kind of had to make the bechamel just right - couldn't be too runny or too thick to spread perfectly while at the same time avoiding getting any hint of the red from the sauce underneath mixed in. also seemed to make a pretty rustic dish a little more elegant?

my controversial food opinion is it's ok for people to not like certain foods
it's also ok to not want to try certain foods

brimstead, Friday, 23 March 2018 15:00 (seven years ago)

Yeah, people should eat what they want. I only get annoyed when people prepare food for other people and they totally won't even try it or just are assholes about it. I eat the lasagna with bechamel when people prepare it for me and say "wow, this is amazing."

Yerac, Friday, 23 March 2018 15:19 (seven years ago)

I would eat it too but would hope no one would tell me it's béchamel

it is ok before people to like whatever foods but it is fun to get "mad" about it

droit au butt (Euler), Friday, 23 March 2018 15:29 (seven years ago)

it's fine to not like things or to like things and message board threads are a safe space for comedy outrage but irl if i'm eating something and you tell me how gross the thing i'm eating is i may not say "gtfo you delicate savage" but i will certainly think it v. loudly

Cambridge Metallica (Noodle Vague), Friday, 23 March 2018 15:31 (seven years ago)

it's also ok to not want to try certain foods

"But, you've GOT to try this!" (aggressively shoves a forkful of food at brimstead's mouth)

My mom will prepare a lovely lunch/dinner for us when we visit. And then my dad comes sauntering over and makes his own pastrami sandwich to eat. He's an asshole.

Yerac, Friday, 23 March 2018 15:38 (seven years ago)

people shoving food at my face is a slightly different kind of savagery and whether i like the food or not isn't the issue for me

Cambridge Metallica (Noodle Vague), Friday, 23 March 2018 15:38 (seven years ago)

my dad used to be terrible for this, if i mentioned in conversation having eaten something he didn't like - and there was plenty of stuff he didn't like - he'd insist every bleeding time on a quick monologue about how horrible the thing i'd just mentioned was. in case i'd forgotten the previous 200 times he'd told me he didn't care for curry.

Cambridge Metallica (Noodle Vague), Friday, 23 March 2018 15:40 (seven years ago)

My dad wouldn't eat the grilled salmon and salad my mom made for lunch once. He ate too many salads and he ate too much salmon growing up. Of really dad, grilled salmon was all the rage in 1950s Michigan?

Yerac, Friday, 23 March 2018 15:42 (seven years ago)

Dads are kind of the worst about this stuff. DON'T BE LIKE YOUR DAD.

this actually helps put the olive oil diet in context tbh

the only things I don't eat are mayo, cooked eggs (except in like fried rice) & savory cream sauces. & when I'm traveling I'll even try those. I mean, I once ate a cow's seminal vesicle, how much worse can béchamel be? (actually the seminal vesicle was pretty good)

Tell you what - I've never been to the USA, but I spent most of my adulthood in China, and very familiar with the few overpriced western grocery stores in major cities which only had US stuff, a little Australian, maybe a few French things, never anything from the UK. The sausages and bacon were always pre-cooked. Literally was unable to buy raw bacon or sausages at all. Is this a refrigeration / transport issue or are these things generally pre-cooked?

mfktz (Camaraderie at Arms Length), Thursday, 18 October 2018 18:14 (six years ago)

precooked bacon is available but it is a comedy product aimed at miserable people. precooked microwavable frozen breakfast sausage is probably somewhat more popular. Hot dogs are fully cooked. Otherwise, no.

F# A# (∞), Thursday, 18 October 2018 18:24 (six years ago)

Oddly enough I am a fan of precooked bacon (esp the trader joe's one). I am super lazy about making food in the morning and like breakfast burritos with hot sauce (and bacon when feeling decadent). Cooking bacon is way too annoying, especially in a house full of vegans/vegetarians.

for i, sock in enumerate (Sufjan Grafton), Thursday, 18 October 2018 18:43 (six years ago)

I never really liked kielbasa but there's a not dissimilar French sausage called saucisse de Montbéliard and it is really really fantastic when cooked in red wine all day, and I wonder if the same would work with kielbasa.

because I live in a heavily muslim quartier I can't really get good sausage close by (i.e. within half a kilometer) so we uh had hot dogs for dinner tonight. no they are not in any way better than american hot dogs, but they are just fine nonetheless.

droit au butt (Euler), Thursday, 18 October 2018 18:47 (six years ago)

I agree. I am not a huge fan of potato chips, but I like pringles (and those pickle flavored or balsamic flavored ones).

Yerac, Thursday, 18 October 2018 18:48 (six years ago)

At a school I was working at this year they had switched to beef sausages because they had some Muslim students, and they were a vast improvement from the cheap bangers they had before, if a bit too salty.

mfktz (Camaraderie at Arms Length), Thursday, 18 October 2018 18:49 (six years ago)

yeah I can get some Turkish beef sausages but they're not widely popular here. I should say that merguez are easily available in my quartier & we eat them not infrequently but they're more spiced and thus more limited in application.

Australia, for all its British, Irish and Italian heritage really can’t do sausages well. Beef sausages are the staple and not good, bacon, is very much lacking and the Italian sausages seem somewhat dry. Maybe Australian pigs aren’t fat enough.
