Scones with a twist!

Kumara and cumin scones

INGREDIENTS
450g self-raising flour
2 tsp baking powder
1 tsp salt
2 tsp icing sugar
2 tsp ground cumin
1/2 cup cooked kumara, mashed
50g melted butter
150ml chilled water
180ml chilled milk
extra milk, for glazing

METHOD

- Pre-heat oven to 200C.

- Sift dry ingredients into a large mixing bowl. Add kumara, butter, water and milk and mix with a spatula until a soft, sticky dough is formed.

- With lightly floured hands, press dough out on a lightly floured surface and cut into desired shapes. Place on a lightly floured oven tray and brush tops with extra milk. Bake for 12-15 minutes or until golden and cooked. Serve warm with butter.

Makes: 10-15

(tho I would probably be lazy and use pumpkin, but that would work too)

I've got a great recipe at home - I'll have to remember to bring it into work. The classic scone + strawberry jam + clotted cream + pot of tea + sunday football = best thing ever.

It's tomorrow's breakfast. I'm going to use pecans, too.

Ooh interesting!

I have left over pumpkin, so I'ma try these too, today. HOwever I am going to ditch the icing sugar in the recipe. I like the idea of the scones being far more savoury, almost curry-flavoured.

Made last night in fit of depression and eaten today in sunshine:

8oz self-raising flour
2oz butter
half-tsp salt
4oz grated Lancashire cheese (anything salty and crumbly would do)
enough milk to bind

Breadcrumb flour (mixed with salt) and butter, then add cheese and mix in milk to form soft dough. Rest, then roll out, cut out scones with a round cutter, then bake at 190C for about 10 minutes until golden brown. Flaky, cheesy and delicious hot or cold.
