For years I avoided walnuts due to childhood memories of them tasting unpleasantly bitter. Later discovered that what I'd had back then were probably rancid... love them now.

I've only recently learned that almonds MUST be roasted, in which case they're god-tier.

Walnuts are super-versatile, eating them raw or in bakes (or even savory dishes).

Cashews are a staple for vegan cooking/baking, and I do like how sweet they are.

1. Almonds - with skin, roasted 15 mins in the oven, no salt. No competition.
2. Piemont hazelnuts
3. Peanuts - with skin, no salt. Alternative: fresh ones, cooked in water. Also peanut butter obviously, the artisanal type, preferably from Africa.

I really like Pecan and Brazil but they're not for daily consumption. I mean, they're really healthy, but good in small portions.

I had a hard time choosing between pistachio and pecan. I voted pecan but it could have gone either way, really.

I once did a huge splurge at the farmers' market and got a jar of pistachio butter and a jar of these insanely delicious nectarine preserves with vanilla bean. This made for a breathtakingly delicious and expensive PB&J.

shelled roasted peanuts/groundnuts/monkey nuts are a very nice and cheap variety of nut, but make a hell of mess. When I vac up there always bits of shell that have been walked all over the house. I love Cashews, but too fucking expensive these days. Love Almonds but I don't have a dentist at the moment and worry that they might be chewy enough to break my dodgy old dental crown. Non-salted Pistachios for me, because the salted ones are too much.
