the pineapple boats look delicious honestly, i'll take that one over the braised beef (i'm into glugging a bunch of pinot along with packaged onion soup mix into beef sauce). never been a fan of filipino cuisine unfortch, that dish sounds boring to me, take me to flavor town fellas.

i agree the caldereta looks like it's asking for something more, but these are all reasonable, fine recipes. i'd like to see the method and presentation for the pineapple boats but that's the most appealing list of ingredients.

the pineapple boats are basically like.. you scoop out some pineapple and layer in rice, chicken (cooked with all the ingredients after salt and pepper), mango/tomato/red onion/cilantro salsa.

oh, weird. Costco Connection has a website, but it has a different set of recipes for the same issue/article. I'll have to see if I can dig up the paper copy around here...
