Polenta

It somehow seems to have happened that I have got to the age of nearly 33 without ever having eaten polenta.

Anyhow, I got a block of the 4ready-made stuff from Tesco. It has some ideas on the back of the back of what I can do with it, but I know you lot can do better. Come on, ILC-ers, tell me nice things to do with polenta.

I like it sliced, heated (saute or bake) with gorgonzola and a garlicky marinara sauce. You can sauce it with anything you'd sauce pasta with, though it works better (I think) with medium to heavy sauces. I'm thinking a cream/bacon/peas sort of thing would be nice.

bake a slab and serve it with herbed goat cheese and some fresh veggies, maybe make a relish with capers if you're feeling ambitious.

if you want it to be in shaped form follow above suggestion. but you could also mix it with abit of stock over med heat until it gets thick again and then stir in cream and parmesan(any hard cheese) to taste and serve it creamy like porridge. this is grrreat in the winter.

ie it's more expensive than mashed potato, is more complicated to make & tastes worse (when I make it, anyway).

actually I remember, i've even had it at the River Cafe & was not impressed. Maybe if you're an Italian peasant who needs cheap filling carbohydrate, but really...

I don't hate polenta, but it doesn't get me excited and mashed potatoes kinda do. But then again I don't seem them as being all that similar...

I did Teeny's goats cheese thing in the end, with roasted veg. It was very nice, and this "why bother when potatoes exist" thing is utter madness.

Polenta is a wonderful canvas for all sorts of creative experimentation. My favorite method is to cook it in chicken stock and then add some crisp pancetta or bacon, chopped flat-leaf parsley, and chives and serve it as a side dish. Excellent for the onslaught of fall.
