Fast food...veggie thread

No, not fast food really, but I'm trying to cook health, and wheat free and all that stuff but right now I don't have a lot of time. What do you cook that's veggie-friendly and QUICK QUICK, WUICK?!?

(I already know beans on toast...)

I know I posted this on another thread, but this recipe is one of my favorites. It's soooo easy, too:

Summer Tomato Pasta (4 servings)

Add 1tbsp ea olive oil, balsamic vingear, lemon juice to large mixing bowl. Add salt and pepper to taste. Mix with 10oz fresh mozzerella cheese, cubed. Add two large tomatoes with seeds removed, cut into largeish pieces. Add a bunch of chopped fresh basil. Add 1/2lb of cooked pasta (2 cups dry) -- penne works well. Done.

It takes maybe 20 minutes to prepare, including time to boil water for pasta. You can also play around with the seasoning, adding a little more vinegar or a little more oil or (yes, please) more basil.

there's a lot of stuff that's good to make a big batch of and then freeze/refrigerate for a quick heat-up later on--soups, casseroles, currys etc. Mexican food is generally pretty quick to whip up from scratch, and you can use corn tortillas instead of wheat. A can of refried beans takes about 5 minutes to heat up on the stove, then just load up your tortilla with cheese and veggies too. Big salads with cheese and boiled eggs.

pre-cut bags of stir-fry veg are awesome. you can throw a pot of rice on to cook and in the 20 minutes that takes to cook, mix up some soya and chili sauce and chinese cooking wine or rice vinegar as stir-fry sauce. the veg only need about 5 min in a very hot pan.

Sort of a variation on ng-unit's suggestion: cook pasta directly in canned stewed tomatoes or diced tomatoes in juice -- when the pasta's done, the dish is done. Chopped basil and some grated parmesan at the end if you like.

Chop up red onion, black olives, cherry tomatoes, coriander and mint, cook off some cous cous, mix it all together and dress it with salt, pepper, olive oil and lime juice (a little cinnamon and allspice optional). Pile it into a pitta bread.

oh you know what keeps surprisingly well? roasted vegetables. Chop up some veggies and grill or broil them (this doesn't take too long anyway) then toss in olive oil and maybe a bit of lemon juice or vinegar, and they'll keep for about a week or so I'd guess. Then you can zap them in the microwave and they're fantastic over rice, in a burrito, as a side, whatever.

Peanut noodles! Mix a heaping spoonful of peanut butter with rice vinegar, soysauce, honey and water (in equal portions) to thin for sauce. Mix with cooked pasta and diced onion, broccoli florets and sesame seeds sauteed in sesame oil. Garnish with chopped carrot and peanuts and parsley or cilantro.

not only fast but cheap cheap cheap. get some pasta, a courgette, however many chillies you like, some butter, some garlic and some pretend parmesan (or REAL if you're not that broke). start the pasta cooking. slice the courgette up then the chillies and the garlic. when the pasta's about 2/3 done, put the butter in another pan and start it melting. when it's melted chuck the courgette and chillies in. push them around for a bit then stick the garlic in too. when the courgette is starting to go translucent but not floppy, drain the pasta and throw it in the pan with everything else and mix it all up, then put it on your plate and pour pretend parmesan all over it. it takes 15 minutes (or however long it takes your pasta to cook) AND leaves time for getting changed/nipping to the shop once you've chopped the veggies but before you need to start cooking them.

Sweet & Sour Carrots: peel carrots, cut into chunks, boil until tender, drain water. Back over heat: add a knob of butter, some vinegar and brown sugar, cook together until the last three ingredients make a nice glazy sauce. It's a healthy vegetable and dessert in one!
