Tasty Salad Ideas

Last night i made a tomato salad with roasted red onions, roasted tomatos, garlic and ev. it was so bomb this got me thinking, cuz i like salads but i don't make them much. what i would like are "easy" salad ideas from ilc'rs please.

I once had what was described as a "cherry coke salad"
It was jello made with coke, cream cheese-filled marischino cherries and candied pecans. Wild times.

Baby spinach, cherry tomatoes and tuna, tossed thru with a dressing of crushed garlic, lemon juice and olive oil. Simple and OMGYUM.

Hearts of palm, tomatoes, balsamic vinegar, olive oil and a little bit of something green and pungent like arugala. I stole this recipe idea from a salad at my work and it's delicious.

Pea salad is especially nice with fresh peas, but you can use thawed frozen petit pois too.

3 cups of fresh peas, lightly steamed
4-5 slices crumbled bacon
1 cup sour cream
chopped green onion
salt and pepper to taste
chopped mint or fresh dill

Mix it all together, serve chilled.

Fruit salad/waldorf salad is good with lime mayo instead of standard mayo. (Any homemade mayonnaise recipe with lime juice instead of lemon juice, + lime zest.)

That pea salad sounds good.

If you're the sort of person (like me) who would go out to the garden to pick peas and eat them all straight out of the pod while you were out there so there weren't any for dinner, you'll like that pea salad. I am so anxious for our farmers' market to start up!

Also, have you tried peavines?? They are delicious sauteed.

lauren, thanks i like it. good cukes are hard to find right now in illinois though. cherry coke salad: bleya! sounds like dessert not salad. mr brownstone, thanks, sounds perfect; love it. causitry, who is jesse? sunchokes are dope boiled for a few, then sliced and sauteed. jaq, pea salad i will try. thanks

When tomatoes are ripe, I seed and chop a bunch, chiffonade several handfuls of fresh basil and flat parsley, toss in a 1/2 cup or so of couscous, whip together some olive oil, lemon juice, and salt and mix it all up. A sort of twisted tabbouleh.

3-4 potatoes, cubed and steamed, then cooled
2 T olive oil
handful of chopped dill
about equal amt of chopped parsley
juice of one lemon
salt & pepper
one cup of goat yogurt

My go-to salad (after writing this, I think I'll make it right now)

spinach & arugula (or romaine on occasion)
smoked salmon
gorgonzola
pecans
pomegranate seeds
chopped pear (usually use bartlett pear, but most any kind will be fine)
olive oil and a little bit of balsamic (go with whichever combination tastes good to you)

my go-to salad lately is:

~one can chickpeas
couple handfuls of spinach leaves, chiffonaded (is that a word?)
1 chopped tomato
1/4 pound feta, cut in cubes
handful of chopped parsley
fancy black olives (optional)
red onion or shallot

for dressing, whisk together:
olive oil
red wine vinegar or lemon juice
1 t ground cumin
1-2 pressed garlic cloves
a pinch of cayenne pepper
salt & pepper

i rely on 2 summer sinner salads in hot weather

1) pan-"grilled" chicken cutlets/spinach/avocado/scallion/cilantro/lime vinaigrette

Baby spinach
Raw kale
Red onion (sliced thin)
Kalamata olives
Avocado
Flax seeds
Sesame seeds
Nutritional yeast flakes
Dulse flakes
Tossed with a bit of toasted sesame seed oil
Spayed with some bragg's liquid aminos

Anything w/sesame oil/seeds is excellent.

I bought a pack of japanese rice sprinkle that consists of black & white sesame seed and salt. It it so good on *everything*.

one month passes...

i couldn't find a cabbage/tuna sandwich i liked so i invented this:
1 can chunk light tuna
some finely chopped cabbage, a little more than the tuna
dressing:
salt
pepper
paprika
juice of one lemon
about a tablespoon of dry mustard

then it wasn't mustardy and acidic enough so i added a little rice vinegar and mustard oil. i meant to add shredded carrot too.

My favorite salad green right now is arugula. Maybe winter tastes need to be more assertive and even bitter? The delicate baby whatever yellow-green stuff doesn't appeal.

Made dressing by glopping storebought hummus into a jar and shaking up with lemon juice and water. Had for lunch 4 days last week!
