I made a miso-based dressing for tuna steaks. i'd like to use the rest of the 15 ozs. of the 16 oz-tub. 2 questions 1) Anyone have a simple recipe for miso-cod or any other recipe using miso...... 2) how long does this paste last in the fridge? can i freeze?

Miso keeps for a year in the fridge. Use it to make miso soup, add it to stews/hearty soups, use it to make salad dressing (miso/wasabi!).

This is great news! I thought it went bad pretty quickly, so I've been holding off opening a large pouch of brown rice miso because I didn't feel like using it all up quickly. A bowl of soup might be dinner tonight.

It's fermented, so keeps a long, long time :)

I wonder if freezing it would do bad things to it - I suspect it could. But since it keeps so well in the fridge, no real reason to freeze it. We are in Seattle next weekend, so time for another Uwajimaya stop! I like miso/tofu/scallion/wakame soup. Can we pick anything up for you? :)
