I am living in Santa Fe and buying lots of Hatch green chiles. Are these chiles good for making pepper jelly? Does anyone have a good recipe?

Hatch chilis are kind of mild - I usually think jalapenos for pepper jelly. Their flavor is awfully nice though. I just packed up The Chili Pepper Bible today - if I can find the right box easily tomorrow, I'll post the pepper jelly recipe from it.

I used to live in Phoenix and flew frequently to Albuquerque for business. It was great to pick up a bunch of Hatch chilis from a street roaster to take on the plane - smelled so good, all the way home!
