I used the Marc Bitman (How to Cook Everything) Lamb Curry recipe last night. WOW! It is fantastic. I ended up using half curry powder and half garam masala - both some Indian brand I don't remember, which made it slightly sweet and very fragrant.

I'm all about making large stewy dishes that last a week lately. Can anyone recommend other curries to try or variations to do on the Bitman recipe?

try making your own garam masala? start with bittman's recipe -- it's pretty basic, you can add both green and black cardamom to it and/or a few cloves, or fennel -- and then roast some autumn squash for the start of a veggie curry.

i love my bittman cookbook and i'm so glad to hear that his curry recipe is good--i haven't tried that yet. i may see if i can figure out a vegetarian variation (my roommate is veggie).

Is there really a huge, noticeable difference if you make the garam masala fresh?
