Borscht

Anybody got a good recipe? Some of the ones I've seen call for a lot of meat, which seems wrong. Another called for just ONE beet, which seems wrong, too. My husband is cooking a Russian dinner tomorrow.

there are so many ways to make borscht, though. i've had it with kidney beans, without kidney beans, with big chunks of beef, without beef, with meat-filled dumplings, without meat-filled dumplings, etc etc etc. all of these variations were "authentic." hell, there's even white borscht which comes with a big kielbasa floating in it. if you want a specific style then you're going to have to look for a specific recipe, i think. there isn't one standard.
