thx everyone !

i once watched this show where this man made salmon packets - salmon + lemon, etc. wrapped well in aluminum foil - he cooked these in his dishwasher!

!!

my friend tried that after reading it as a lazy person's cooking tip in details magazine a really long time ago. he said the dishwasher smelled like salmon for days. apparently opening the door after a cycle and getting a gust of fishy steam is not very pleasant.

yeah, i'm pretty skeptical of these 'cooking in dishwasher/cooking on car engine' type recipes.
i went to the grocer's to get some salmon - not a good day for it. the person behind the counter was like "try tomorrow, plz".

I think salmon, by far, is my favourite fish to eat. Yum yum! I don't like it dry and overbaked, but still slightly pink at the inside. I especially like the fatty bits. To be honest, if it's like that, I don't care what the *rest* is like cause I'm *orgasming* all over the place. ;-) But anyway, I like smoked salmong, I like salmon in terriyaki sauce, I like baked salmong slapped between a sandwich (hey why not!), I don't even mind if the salmon came from a deepfreeze packet in the supermarkt. Just kidding, I stopped buying that *shit*. Fresh from the fishmonger, that's the way to go!

*sigh* I'm craving salmon big style now.

alton brown had a recipe the other day that looked good: put down some parchment paper, and on top of that put some very thinly-sliced veg and fresh herbs. lay an 8oz salmon filet on top of that, with a few well-trimmed orange sections (he was adamant about no pith) and some finely-chopped garlic over it. twist the paper into a pouch around the fish, then microwave the package for 4 minutes or put it into the oven for 12-15 (if it's going in the regular oven, you can staple the paper).

Take one sun-dried salmon fillet, pounded to a fine powder using a stone mortar and pestle. Place the salmon powder in a deerskin pouch and pour in melted bear fat until the powder is absorbed into a thick paste. Add dried, pounded huckleberries to taste and sew pouch shut. Store for several weeks in a cool dry place until it is ready to eat.

lauren: the method's called en papillotte, works well with a lot of fish. I generally only do it in the oven, and you want a little bit of liquid in there to steam the fish as it cooks (grapefruit juice works well, I find).

About 50% of the salmon I cook ends up pan fried and plopped on top of some soupy noodles made with ginger, garlic, coriander, chilli and lime. It takes about 10 minutes and is very satisfying. Works well with some kind of greens in there too.
