So how do you like your potatos (sp?). Last week I made mashed potatos for the very first time. I don't know why I never got around to making puree before. Being Belgian, I love french fries the best, but a good dish of mashed potatos is so wonderful. There's something extremely comforting about it. I'm very eager to make some with cheese next week or so. Yesterday we ate boiled potatos in the skin! VERY YUMMY

potatoes that get all smoky from a campfire are amazing.

sliced small yellow potatoes are great done on a grill with coarse salt, olive oil, and fresh sage leaves. this preparation also works in the oven, although you don't get the same barbecued flavor. now i'm thinking of all the ways i like potatoes and realizing that i could probably write a book.

It's easier to list the ways I don't like potatoes: over-mashed with too much skim milk so they break down into a gluey thin paste; not cooked enough in a casserole so they are crunchy disks in tomatoey grease; instant flakes except when used as a breading.

Potatoes of any sort roasted in goose grease are my number one favorite permutation.

ew. undercooked potatoes in casseroles/soups are BAD. undercooked or otherwise not crispy french fries disgust me as well.

A world without good mashed potatoes is too weird for me to contemplate. I love potatoes in almost any form (except the icky ones Jaq mentioned).

Does anyone have a good explanation for what makes some fries floppy? I seem to remember reading about this somewhere, maybe ILX? They're a curious beast--not undercooked, not oil-logged, not overcooked, and they often appear in a batch with brethren of similar dimensions that are crispy.

I would like to know what makes these little miracles of limpidity happen.

Fast food places that have them:
-McDonalds
-Wendy's
-KFC

Burger King used to have them, but then in 1997-ish they started coating them in some shit that makes them crunchy and unappealing to me.

Also - In-n-Out Burger makes the weirdest fries. Pale and an odd dried-but-crispy texture on the outside. They cut up the taters and fry 'em right then.
