Thawing fish

I just left some tilapia on the counter to defrost before reading that this is an unsafe way to thaw. I then put it in the fridge. It was out for half an hour at most. How risky would it be to still use the fish?

Not very risky at all, especially if it was still partially frozen when you put it in the fridge.

I try to defrost things for 24 hours in the fridge, but usually forget so end up putting food on the kitchen counter while I'm at work - that's about 10 hours. My worst defrosting habit was, as a student, running turkey steaks under the hot tap until they went floppy. What the heck, I'm still alive.

If you screwed up and forgot to take the fish out soon enough, a bowl of cold water is safer and faster than leaving it out. Works best for shrimp.
