Today I made tuna knishes.

They were the bomb, even though I subbed two of the ingredients (flour for potato starch, bread crumbs for matzoh meal) and the entire technique (fried instead of baked).

They were fishcake-ish! And delicious. I'll probably make some more tonight cause I still have tons of ingredients. Maybe I'll up some pics.

canned salmon would probably do nicely for something like this, too.

Mmm, true! Maybe I will try that instead.

I was thinking smoked mackerel, maybe.

Totally! Salmon croquettes were one of my mom's specialties when I was a kid.

GIANT KNISH sounds more than good

We had a reasonably quiet one this evening so I was pottering about with sauces when time allowed, a tomato sauce for pasta with chorizo sweated into it and then a spot of cinnamon and cumin was innoffensive.

Tonights special of duck breast stuffed with pheasant breast and then roasted may strike some as excessive, to my mind it didn't go far enough. We had some wood pigeon we could have put in there goddammit.

I like it

I've only just realised that in knackered post work haze last night I just sort of assumed I was on the what's cooking thread, hence derail. My apologies. Back to discussion of all things knish-related.
