Do you use butter in your crust? It burns more easily than lard (which I prefer - makes an incredible long crust). My pie recipes are all simple - make dough for a 2 crust pie, pit enough tart cherries to fill a 9" pan to heaping, sprinkle with approx 3/4 c of granulated sugar and 2-3 tbsp tapioca. Heat oven to 400 deg F. Line pan with the bottom crust, fill with cherries mixture, dot with 2-3 tbsp butter. Cover with top crust, crimp edges, cut vents. Maybe brush crust with egg white and sprinkle with sugar. Bake for 45-50 minutes on a cookie sheet.
