i'm going to an all-potato dinner tonight, where everyone makes a dish using community-grown potatoes. last year i did garlic mashed potatoes because i figured everyone else would avoid the obvious, and i was right. this time i'd like to do something a little different if possible, but i don't have a lot of time. ideas please!

Bittman had a tasty looking "Minimalist" video a few months ago of soft tacos with a potato filling.

Couldn't find the video, but here's the article: http://query.nytimes.com/gst/fullpage.html?res=9C00EEDB113BF930A15757C0A96E9C8B63&sec=&spon=&pagewanted=all

A nice coconutty yellow curry of potatoes and onions would be good too.

A decent potato salad, ie, one that isn't like eating lumps of cold wax.

snoball, Sunday, 19 October 2008 22:54 (sixteen years ago)

the pizza turned out great. also at potatofest:

potato leek soup
oven fries
hot potato salad
potato latkes
scalloped potatoes
other potato stuff, it all kind of ran together and i don't want to see a potato again for a long time

no sweet potato pie :(

oven fries

??? I assume that these were homemade, rather than the result of someone going "shit, forgot I had to do this potatofest thing, quick get those fries out of the freezer!"

snoball, Monday, 20 October 2008 19:20 (sixteen years ago)

oh totally. they were really good, too.

ok pro-tip time: when the recipe says use a nonstick pan, USE A NONSTICK PAN!

this girl apparently does not own any, and even w/ the oil, shit stuck way too easily. it was hard to brown the onions/potatoes because a layer of burning developed at the bottom. then, during the egg stage, it was absolutely impossible to try to flip, so i flipped in sections. still tastes yum, though. also i added zucchini.

red potatoes get too sweet when you cook them. what potatoes don't do this?

harbl, Thursday, 12 November 2009 00:33 (fifteen years ago)

purple potatoes?

yukon gold.

i don't really know much about potatoes other than that they are delicious.

tehresa, Thursday, 12 November 2009 00:33 (fifteen years ago)

i've found that even more in purple potatoes. maybe it's just me though. they aren't very sweet; it's barely perceptible. but i want something that tastes really potatoey

harbl, Thursday, 12 November 2009 00:36 (fifteen years ago)

Russets - baked, steamed, or roasted. The starchier/fluffier potatoes stay more potato-y while the waxier ones like redskins sweeten up.

Jaq, Thursday, 12 November 2009 00:44 (fifteen years ago)

aha i thought so. i haven't eaten russets in forever.

harbl, Thursday, 12 November 2009 00:46 (fifteen years ago)

oooh me either!

tehresa, Thursday, 12 November 2009 00:46 (fifteen years ago)

I'm making mashed potatoes for the first time; actually, the recipe calls them smashed. What do chives look like? I got these things that look like green onions but are shorter and have a rounder bulb at the bottom...are these chives? If not, will they taste okay as garnish?

Virginia Plain, Thursday, 12 November 2009 01:51 (fifteen years ago)

chives look like long thin blades of grass

This was a Mexican bulb onion, I discovered. It still tasted good with the smashed potatoes.
