1) Creamy roasted garlic and rosemary
2) Lime, coconut and lemongrass (use coconut milk!)
3) Mandarine-molassas
4) Persimmon-pepper

That last one sounds wonderful. Sherry vinegar, or actual sherry? I go through sherry vinegar at a shocking rate; it's kind of a crutch. Currently I have a roasted tomatillo vinaigrette made with sherry vinegar and a weirdly delicious blueberry-chipotle vinaigrette that I drizzle on kabocha squash soup.

Also, did you see the Times article last week about how 'vins are in'? Thank heaven, just when I was despairing for a new trend.
