that martha stew looks like a good ref, but sheeeit 11-12 yolks?! that's crazytown. also looking at this and thinking sweet potato = pumpkin although there is no egg in that recipe . . .

That many egg yolks is U&K for awesome challah. I think any sweet potato/squash recipe would be okay with pumpkin substituted.

o ok so a dozen yolks is not really crazytown. i guess unless you have a cholesterol problem

ok peeps here is the plan, adapted from From A Baker's Kitchen, by Gail Sher
1/2c honey, 1 1/2c scalded and cooled milk (original calls for lukewarm potato water), 1tbsp active dry yeast, 1c whole wheat flour, 1c bread flour (original calls for 2c unbleached white bread flour)
prepare the sponge. allow it to rise from 45m to 2h.
1tbsp salt, 1/2c unsalted butter, 6 eggs at room tmp-well beaten, 3c can pumpkin (original calls for 3c cooked unpeeled potato mashed with butter and milk, 3c whole wheat flour, 4-5c ap flour (original calls for 1c potato flour and 6-7c unbleached white bread flour)
add these ingredients to the sponge, knead, and let the dough rise at least once, preferably twice.
cut the dough and shape into 2-3 oz pieces and shape into rolls. place the rolls close together on greased and floured appropriately shaped pans. let proof, glaze and bake at 350 for 20-25m or until they look done. allow to cool on racks or if yr a fancy one serve 'em up warm.
happy fuckin thansgiving, ilovecooking!
