I think I'm (really) guilty of this. I use organic milk, organic whole-grain flours, organic sweeteners, organic yeast, etc.

Have you found organic bread flour? I have had a difficult time finding this. Organic AP flour I can get in spades...

that's really weird, in the uk in some shops at the flour section you can't move for organic bread flour, in all kinds of guises.

Does Bob's Red Mill do organic bread flour? I can usually find all sorts of other specialty flours from them, and they do an organic pastry flour. I think they're based in Portland.

I haven't seen Bob's Red Mill organic bread flour, but then their stuff seems so expensive anyways...

Portland is so organic friendly that I've always been surprised that the Wild Oats or Whole Foods or whatever doesn't have bulk organic bread flour. Maybe I need to find a co-op.
