pigs' trotters

I bought a couple of pigs' trotters for 20p each from the butcher the other day. Simmered them for 3 hours with onion, celery, carrott, bay, parsley, peppercorns etc. Let them cool & peeled off the skin to find, well, nothing really, apart from bone, sinew & white fat.

Can anyone tell me what I'm missing? And what I should do with the 2 pints of jellied stock in my fridge?

hugh's MEAT book has got a great recipe for pork pie, there's a thread on here about the pie we made, I'll see if I can find it.

it's not necessarily as helpful as I'd hoped, but it's got pictures!

because we were using the trotters for stock, we weren't too bothered that there wasn't any 'meat' on them. Perhaps if you want to get something other than jelly I'd imagine you'd have to cook them for less time, on a really low heat?
