Classic in some FPS games like Goldeneye, NOLF, and NOLF2. I enjoyed the snow/ice levels on NFS4, but generally dud in driving games.

Cannon Fodder = Classic. The Skiddoo, man! Awesome. Mostly dud though, except where, like in Mario 64, it lets you slide in a controlled manner to race someone down to the bottom of a hill, or whatever.
Many 'Ice' levels throw in plenty of snow, which is grippier and does make them a bit more tollerable though.
It's a gaming staple though, like water levels, fire/volcano levels, underground levels, etc.
