the license tests in Gran Turismo are hard to beat not only for sheer difficulty and bloody-mindedness but because they teach you how to play the game perfectly.
uncharted 2's is pretty sweet though (i'm talking about the intro action on the dangling train car and subsequent scampering through wreckage, basically)
