how's about Toad in the hole

Make a batter of 2 eggs, 8 ounces of flour, and a pint of milk stand in the fridge for an hour.

heat the oven up to 220?C and put some sausages in a roasting tin with a little fat (oil, lard, whatever). Cook the for a few minutes then arrange. Pour on the batter. cook until the batter crisps up and goes golden.

Caramelise some onions and shallots in a hot mainly dry frying pan, use a little water and sugar once they brown to get them going. Reduce, by half, some red wine in a saucepan. and add it to the onions. cook through and add a knob of butter.

Serve the Toad and the sauce with some savoy cabbage, or kale, greens broccoli
