What is relatively easy to cook, but impressive (head's up Ed!)?

So my girlfriend is back from holiday on Wednesday and the corny indie mofo in me wants to cook something for her, y'know romantic like. Any suggestions that aren't pasta? Is Thai Green Curry difficult?

What's she like? What can you already do? Practically everything that doesn't involve assembly or candy thermometers is easy if you have the right ingredients and kitchen, but impressive's more subjective.

I keep an online cooking notebook mostly for my own benefit, but there're a few things there that might fit.

sushi rolls = very easy. but i dont think thai green curry really qualifies as "romantic". it sort of makes your tummy rumble, breath like dragon, sometimes gassy.

Green curry is easy. Get yourself to your local oreiental supermarket and get yourseld a pot of green curry paste, Mae Ploy is my favorite, some fish sauce, (soy will do), some kaffir lime leave, or even some kaffir limes, some shahllots, green peppers, meat or tofu, bamboo shoots, coconut milk, some onions, garlic and whatever else you fancy throwing in.

Finely chop the onions, garlic and shallots stir fry, add the meat and brown, add all of the other vegetables and cook them, down a little. Add a dollop of curry pastse and the chopped kaffir lime leaves and a litle zest and juice of the limes, Add the coconut milk and a hearty splash of fish sauce and allow to cook down for half an hour or so.

Serve with fragggrant rice.

Another nice easy thing is Spannakopita, greek spinach pie.

Steam a load of spinach then shred it finely with a knife. To a bowl add a load of chopped feta, some parmesan and some ricotta (or the greek equivalents which I don't recall the names of). Stir int he cheese as it melts, add salt and pepper (not too much salt the feta is salty). YOu can add chopped pine nuts if you like.

In a baking tray lay out sheets of filo pastry, alternating pastry with either melted butter or olive oil brushed onto the surface.. When youve done six sheets or so spread out the mixture and then lay another six or so sheets of filo pastry on top again doing the oil/butter thing. Brush the top with an egg wash and then cook in a medium oven until golden on top.

you could serve the spannakopita up with some houmous

can of chick peas, tahini, minced garlic, lemon juice, salt and pepper; mix together until you get the consistancy and flavour you want serve with warm bread.

mark s has a great felafel recipe which could go with this.

You could always grill a little lamb to go with this, if you fancy.

I'm impressed by any cooking more complicated than taking it out of the packaging and putting it in the oven. On an ambitious day, I might go as far as to put it on a baking tray first.
