Excellent, thank you! (And yeah, I should maybe include a warning about finger-chopping; my hands were covered in nicks and scars and burns long before I started making this, so at most I'd accidentally trim a fingernail or something.

Apparently, having just woken up, I believe that once you have a scar on a given spot, that spot becomes invulnerable to further injury.)

Tep (and others), another culinary challenge confronts me. What do I do with ground beef (the good 50% sirloin, 50% chuck kind, not that repugnant lean shit) other than 1) hamburgers, 2) meat loaf, 3) ragu/bolognese sauce, 4) meatballs, and 5) other obvious uses of the stuff.

Ideas?

Well damn, you pretty much covered it there. There's a certain amount of variety within those, though, and you can do all kinds of things with a meaty pasta sauce -- for lunch, breakfast, whatever, I just had leftovers from:

Some Kind Of Pasta Bake Thing

3 large leftover meatballs
1 box of cooked pasta
Ground beef, browned with onions and peppers, drained of fat, added to enough tomato sauce to cover 1/2 of pasta
Enough sour cream mixed with chopped scallions, thyme, grated parmesan, and dash of salt to cover remaining pasta
1 big hunk of smoked mozzarella

Layer like so, from bottom up, in casserole dish: sour cream pasta; meatballs; meat sauced pasta; slices of smoked mozzarella. Bake at 375 until cheese is melted and has started to crisp in spots.

You can also sort of cut the beefiness of the flavor with prosciutto, pancetta ... OH HELLO I AM A DORK. Take away my Carpetbagger Creole Card now, pls.

Nevermind the "there's not much you can do," here's The Wussy American But Still Tasty Version Of Dirty Rice

1 pound ground beef, browned and drained of fat. You can season it with any of the spices below, if you like.
And yet, ironically, half a stick of butter (1/4 cup)
2 cups long-grain white rice, uncooked
4 1/2 cups chicken broth, homemade or the Swanson's boxed broth (which I like much better than the canned or any other brand, and more than weak homemade; long-cooked serious homemade is another matter, but it's time-consuming)
Sometimes you need a little more liquid there
pinch of flour
2-3 stalks celery, chopped
4-5 baby carrots, sliced fairly thin
1 small green bell pepper, or mango if you're in teeny's family, chopped
1 small or medium onion, chopped
A bit of garlic
Spices: Onion powder, garlic powder, paprika (sweet or hot; I actually like smoked bittersweet paprika a hell of a lot, but I'm a spice geek), hot sauce, black pepper, white pepper, cayenne, celery salt, and a tiny tiny tiny pinch of nutmeg; more or less in that order of proportion unless you want to fedaddle.
1 or 2 bay leaves
Chopped scallions

Melt butter in pot big enough to hold everything else. When butter has stopped frothing, add veggies (except garlic) and stir over medium to low heat until onion has gotten a little translucent and carrot has begun to soften. Add flour and continue stirring until flour is no longer white (no, this isn't enough flour to make this a true roux, but the flour will incorporate with some of the butter and do its thing as we need it to). Add rice and stir until rice is glossy (if you want, you can continue cooking until rice has browned a little, but don't burn it.)

Add liquid, which will sizzle and foosh. Add garlic, spices, and bay leaves. Cover, reduce to simmer, and cook for 20-25 minutes, checking at the 15-20 minute mark to see if more liquid is needed.

Let sit for 5 minutes to fluff, preheat oven to 425 (the oven bit is optional, I guess). Pour rice mixture into casserole dish, mix in ground beef and scallions, and bake until top layer of rice has just started to crisp.

Serve with additional hot sauce and beer.
