We have plantains growing in the garden: throw some recipes at me

I want to cook the plantains when they're ripe: what should I do with them? Suggestions much appreciated.

Battered and deep fried? I had some yesterday in a brazilian restaurant, but they were a little dry. The batter has to be v light and the plantains have to be most enough, I think. But yum potential = high.

i started a plantains thread a few months ago but i don't think anyone posted on it.

at any rate...

deep fry them in some very hot canola oil until golden brown. with the burner still going, dab them dry and let them cool on a paper towel for a few minutes, and put them back in the hot oil to finish them off. dab dry/cool again, top with cinnamon/sugar/maple syrup, voila.
