You know the one: "WHOOP-whoopwhoopwhoop," usually at the beginning of the track. What percussion instrument is used for that?

you're close. there's actually a stick on the inside attached to the drum head. you rub this (yes, with a damp cloth) back and forth and push down on the skin to change the pitch.
