Hark The Herald Angels sing has always been a favourite of mine, especially all syncopated as played by John Fahey on The New Possibility, his first Christmas album and the only one that is good, I am assured. His slide rendition of Silent Night is pretty incredible too, a must hear I think. It's faintly ridiculous and I think he knows it, which somehow feeds into its cosmic awesomeness.
