Citrus Zest question

What's the best way to keep lime zest if I'm going to use it in a week to 10 days? Freeze it in water, cover it with a neutral oil, or just dry it and reconstitute it later?

It's the oil that's the good part in zest, right? I have no idea what the best plan is.
